Though related to typical chanterelles, Winter Chanterells (Yellowfoot) are closer relatives of the black trumpet chanterelle. They are a small hollow mushroom that rehydrates well despite being dried whole. They have a sweet, nutty mushroom flavour. A delicate and refined looking mushroom, these are great for plating beautiful meals. These mild flavoured mushrooms are known all over the world, sometimes by the name girolle.
